Mom's Squash Soup

Soup:
- 3 cups cooked, pureed squash (butternut preferred)
- 1/2 cup onion diced
- 8 oz. package fresh mushrooms, cleaned and sliced
- 2 1/2 cups chicken stock
- 2 Tbsp. butter
- 2 large cloves garlic
- 1 1/2 teasp. salt
- 1/2 teasp. cinnamon
- 1/2 teasp. cumin
- 1/2 teasp. coriander
- 1/4 teasp. dry mustard
- pinch cayenne pepper
For garnish:
- plain yogurt
- fresh cilantro, choppped
Melt butter, sautee onion and garlic in same until fragrant. Add spices, stir to heat. Add stock, pureed squash, mushrooms. Cook until mushrooms are soft and done, add water if needed. Soup should be pretty thick. Serve garnished with plain yogurt and chopped fresh cilantro on top.
